Ingredients:
- 50g egg yolks
- 20g caster sugar
- 80g egg whites
- 25g sugar for egg whites
- 25g low-gluten flour
- 12g cocoa powder
- 35g milk
- 30g chocolate
- 10g salad oil
- 5 drops lemon juice
Decoration:
- 400g light cream
- Strawberries
- Moderate amount of mint leaves
- Moderate amount of chocolate chips
Steps:
1. Melt the chocolate coins and salad oil together over hot water at about 55 degrees Celsius until the chocolate is smooth.
2. Whisk 20g of granulated sugar into the egg yolks until they turn white.
3. Add the melted chocolate and milk gradually, ensuring each ingredient is well mixed before introducing the next one.
4. Add sifted low-gluten flour and cocoa powder to the egg yolk batter, stirring well until thick.
5. In a separate bowl, beat egg whites with a few drops of lemon juice until coarse foam forms. Gradually add 25g of granulated sugar in three additions while beating until stiff peaks form.
6. Carefully incorporate one-third of the meringue into the chocolate yolk paste, followed by another one-third. Finally, gently pour the mixed paste into the remaining meringue, folding until thoroughly combined.
7. Pour the batter into a 6-inch mold, shake the mold vertically, and bake in a preheated oven at 165 degrees Celsius for 35 minutes. Once baked, shake the mold and invert it to cool.
8. Once cooled, unmold and cut into slices.
9. Whip light cream with sugar and pipe it onto the cake using a large round tip.
10. Layer cream and strawberries, spacing them out for an aesthetically pleasing presentation.
11. Decorate with mint leaves and a sprinkle of chocolate chips.
